Vezzena di Malga

Raw material: Raw cow's milk from Rendena cows in alpine pastures. Shape & Texture: A thin springy rind, semi hard, brownish straw coloured. The paste is compact with few eyes. After aging it is possible to grate. Taste: The aroma is full and slightly hot, rich with aromas of herbs and pastures. Curios facts: Very simular to aged Asiago cheese in it's processing, it gets it's peculiarity from the pastures where the milk is collected: the table land of Folgaria-Lavarone and Luserna and the passo Vezzena, where we can find the malghe Cislon, Cadinello, Pampeago, Lavazè and Salanzada
