Gorgonzola dolce – Piemonte
DOP blue cheese with extraordinary creaminess for spoon service. It is produced with whole cow milk collected exclusively on the hills between Lake Orta and Lake Maggiore. The crust is wrinkled and lighly pink, the pasta is creamy, straw-colored, crushed dor the development of molds with green-blue veins. Extremely sweet, with sensations of milk and ripe fruit, herbaceousness makes it distinctive, without being intrusive.

Gorgonzola DOP
No Italian cheeseboard is complete without a soft wedge of creamy Gorgonzola Piccante but it can be served in so many other ways too.
Characteristics: creamy, soft, yellow paste heavily veined with green-blue mould; delicate taste of paste contrasts with strong, full flavour with sharp, spicy tang from the veins.
Best with: eat on its own with a sweet Vin Santo or stir into a risotto or buttered pasta.
